Master Dining Showcase · Azzurra & Baan Talay, Phuket
The Theory of Taste
Four masters, one shared obsession.
Set for a fortunate few.
A MICHELIN-starred Thai master and Tatler's Spotlight chef take over the kitchens of Azzurra and Baan Talay.
11days until the first course
A chef collaboration dinner in Phuket, set between sea and lagoon
Two guest chefs, two theories of taste. From the Baltic north comes a cuisine of wild forests and childhood memory. From Thailand's royal kitchens come recipes lost to time, revived by hand. Between the Andaman Sea and the lagoon, Azzurra and Baan Talay answer with Italian tradition and the soul of the Andaman south. Four voices at one table, in a conversation told course by course.

Guest chef · Monday 2 November · Baan Talay
Chef Thaninthorn "Noom" Chantrawan
Chef Noom spent more than 14 years in London's best-known kitchens, including Zuma, Sketch, Blue Elephant and the Gordon Ramsay group. Back home, he won Iron Chef Thailand and went on to judge Kitchen Wars Thailand.
At Chim by Siam Wisdom, which holds One MICHELIN Star, he researches royal archives, noblewomen's cookbooks and mid-Rattanakosin recipes to bring lost flavours back to life. He uses modern technique to honour heritage dishes rather than reinvent them, and his curry pastes are still pounded fresh every day.

Guest chef · Sunday 1 November · Azzurra
Chef Aleksandrs "Alex" Nasikailovs
Latvian-born Chef Alex brought modern Baltic and Northern European cooking to Southeast Asia. He trained at Vincent Restaurant in Riga, then led the kitchen at Baltic Blunos in Bangkok alongside Michelin-starred chef Martin Blunos.
Since 2022, his own restaurant, The White House Bangkok, has served "Modern Latvian" tasting menus full of childhood memory and wild forest ingredients, paired with Thai produce. He is also the house pastry chef and chocolatier, and has competed on Iron Chef Thailand.

The Theory of Taste is a Master Dining Showcase presented by Tatler with Azzurra and Baan Talay, built on a simple idea: every great chef cooks from a personal theory of taste, and those theories grow richer when they meet. For two evenings, 1 and 2 November 2026, four chefs who share an obsession with cooking come together on the island to explore new ideas with the fresh produce of Phuket and the Andaman coast. Chef Alex of The White House, whose modern Latvian cooking draws on wild forests and childhood memory, joins Chef Giampiero at Azzurra to discover where Baltic inspiration meets Italian tradition. Chef Noom of one-MICHELIN-star Chim by Siam Wisdom, who revives recipes from Thailand's royal archives, joins Chef Oat at Baan Talay to pair royal heritage with the flavours and spirit of the south. Each evening begins with a sunset reception and continues with a six-course dinner with pairings.
